What is needed
1/4 cup vegetable oil
3 tablespoons diced tomatoes
3 tablespoons green peas
3 table spoons finely diced carrots
2 tablespoons finely diced onions
1/2 tablespoon sugar
1/4 teaspoon white pepper
1/4 teaspoon soy sauce
3 eggs, beaten
1 tablespoon fish sauce (you will get in supermarkets)

How to
Heat half the oil to heat in a wok. Add all ingredients except eggs, spices and remaining oil and saute 2 minutes. Heat an omelet pan, and add a drop of oil left. Pour the egg just enough to cover bottom of pan. Brown the tortillas lightly on both sides by more than half of the kitchen. Repeat, using up all the eggs. Place a tablespoon of the vegetable mixture in the center of each tortilla. Two times two opposite sides toward the middle, then fold the sides, so that looks like a square. Place tortilla on a serving plate. Repeat until you have used all the omelets and mixed vegetables. Garnish with coriander leaves and slices of red pepper on or near the plate.
